So I’m back in Bulgaria so the first burger I had to eat was the SA7OSH2 by Skapto since we collaborated on it in December. I have to say it feels pretty awesome to have the @kzmburgers on the side of an item in the menu! I had loads of fun during the collaboration and almost everyone I have spoken with likes it more than the previous version which is awesome. I liked it more as well but it did have its issues.

How tasty is the Motherf*#$&r? – 8/10

This is a very THIC BOY. Even I have trouble taking a bite through this monster and I’m a large lad with a lot of burger-eating experience. At the same time, the ridiculous size of the burger is part of its character. There is a line there somewhere…

  • Beef Patty
  • Deep-Fried Yellow Cheese
  • Melted Cheddar
  • Crispy Bacon
  • Marinated onion
  • Lettuce
  • Skapto Sauce
  • Pickles
  • Brioche

The meat was soo much better than any of my previous Skapto experiences. It was very juicy full of flavour, well seasoned. It had a nice springiness to it reminiscent of the Balkan style burgers but the beef flavour was especially prominent. I really liked the fact that the patties seemed slightly thinner. The bacon was very inconsistently cooked but that kind of help. You had chared crispy bits and soft bits through the bites. The bacon favour carried through each mouthful. I liked it for sure and it rounded up the meat experience. Let’s talk cheese. This is where one of my bigger inputs came and that was the seasoning in the deep-fried yellow cheese. It was much more present and had much more character in the burger. I liked it quite a bit and it is one of the “main attractions” in the burger. The cheese was gooey and its crust was crispy and golden. The cheddar however was a bit of a miss. I’m not sure about its purpose in the burger. You already have cheese that provides that gooey feel but the flavours start to overwhelm each other. In few bites the cheddar was present but in most of them, I wouldn’t have minded if it wasn’t there at all. One of my other inputs which I think was realised very well was “more relish”. The Gherkins and the marinated onions brought that acidity and that balance to the burger. Deep-fried cheese and bacon are heavy hitters and you need something to offset them and I think that was done quite well. There was a good tang and crunch. The only problem is the size of the burger made them fall off the burger. The rocket is one of my favourite salads but in the previous version its pepperiness was too much and if you want salad the lettuce is a better choice… but please… shred the F*ing lettuce. Like all the sauces and juices are falling off the burger instead of soaking into the bun. And the full leaf lettuce makes it easy for my burger toppings to fall off and experience less of it. The Skapto sauce was nice, it provided a consistent baseline through the bites, but there was so much going on in the burger I couldn’t really tell what was coming from it. Brioches were nice, springy and flavourful, they were toasted but there was so much sauce and juices, it eventually got a bit soggy. I like the fact they weren’t too sweet.

Burger joint venue and overall experience? – 9/10

In terms of burger joints, I have to say this is one of the more full-featured experiences in Sofia. You have great sloppy fries. Plenty of choice in terms of drinks and junky sides. They have decent beer choice which in my eyes is a great addition to any burger.

Quirkiness level of the experience? – 9/10

An interesting junky style burger. I liked it and it has a charm for sure.
