Don’t you fear, the last burger from my Bulgarian trip is here! Going with a buddy to burger place like Skapto means you can always try a second burger, which means more burgers for me before I have to go change my arteries. You can see my last review from Skapto. The last one was interesting and this is more of a classic.
How tasty is the Motherf*#$&r? – 7.5/10
This was a very classic burger recipe. The execution was better than the previous burger but it could have been better.
- Beef Patty
- Crispy Bacon
- Melted Cheddar
- House-Made Bourbon Sauce
- Iceberg
- Pickles
- Marinated Red Onions
- Brioche
This was a pretty good patty and the best I have had from Skapto for sure. It was juicy, had a nice char on the outside and medium-rare in the middle. It was well salted and the prominent beef flavour was present in every bite. The quality of the meat was good enough but I would have preferred a fattier cut and more spices. The bacon played well with the whole concept and was done right. It combined with the sweetness of the sauce and added to the meaty flavour. The cheddar was for sure the right cheese for a burger like that. The signature flavour was popping in every bite, it goes great with the meats and the sweetness from the sauce. It had a nice junky burger vibe to it. I higher quality cheddar could have played great with the nutty flavour but was going to push the burger in a different direction. The sauce was supposed to be the centrepiece of the burger. I appreciate the fact that it wasn’t overwhelmingly sweet and had a balance to it but it was a bit bland. On its own, it was good but with the rest of the ingredients, it was a bit lost. Maybe more sauce or more of the key ingredients would have pushed it to the right level. The iceberg wasn’t in place. Either put more to provide brightness and crunchiness to the bite, but the pickles were doing that or don’t add any at all. The pickles rounded up the burger very nicely! Nice crunch a lot of brightness and acidity coming from them to provide contrast to the beef, sauce and cheddar. If you ask me, I would have loved thicker pickle slices but I have been brainwashed to love pickles. The brioche was nice and well toasted. Held the burger well and was the right kind of neutral.
Burger joint venue and overall experience? – 9/10
In terms of burger joints, I have to say this is one of the more full-featured experiences in Sofia. You have great sloppy fries. Plenty of choice in terms of drinks and junky sides if you are hungry
Quirkiness level of the experience? – 5/10
A very classic BBQ burger with some more pickles. Nothing we haven’t seen but tasty non the less!
