I’m not the quickest to write my reviews and my burger notes are still haunting me in my todo list. Hence that is why you are seeing more burgers from my trip to Bulgaria. This week I’m reviewing a local favourite Skaptoburger. Although if you see my previous review, you will see I haven’t been very impressed by the burger joint but let’s revisit!
How tasty is the Motherf*#$&r? – 6.5/10
This was an interesting burger. I liked the concept but I think the execution was a bit lacking. The burger had:
- Beef Patty
- Deep-Fried Yellow Cheese
- Melted Cheddar
- Crispy Bacon
- Fresh red onion
- Rocket
- Skapto Sauce
- Brioche
The meat was ok. This time it was salted and had plenty of flavour due to the char. It was much better than last time, but I was still kind of expecting more. A fattier cut might have been better. The bacon combined well and added much more flavour to the beef patty. The crispy texture was very welcomed through the bites. The fact that the burger had two thin patties was a bit disappointing. Either go smash patties or go for a big one. Thin ones don’t provide the juiciness or the flavour in the same way.
The deep-fried yellow cheese was the centrepiece for this burger for sure. This isn’t a common condiment and I like the idea a lot. For those who don’t know yellow cheese is one of the traditional Bulgarian cheeses that is very buttery and tends to have a milky flavour. It has been a staple in Bulgarian places for years. This one was a bit meh… It reminds you of the right thing but it isn’t executed well. The crust should be crunchy the flavour of the cheese should be deeper (you can work it with spices as well). I was helping for the cheddar to be more active but for some reason, it was very subdued by the deep-fried yellow cheese and the rest of the flavours.
The salad was a good idea for a heavy burger like this, but the proportions were all wrong. They could have been missing the salad and the flavour was going to be the same. I think a relish, a lot of lettuce, more onions or a nice pickle would have gone great with this but the salad was just missing. The sauce was there but didn’t have distinctive characteristic it felt like a mayo heavy classic burger sauce without the pickles.
Burger joint venue and overall experience? – 9/10
In terms of burger joints, I have to say this is one of the more full-featured experiences in Sofia. You have great sloppy fries. Plenty of choice in terms of drinks and junky sides. If you are hungry
Quirkiness level of the experience? – 10/10 You wouldn’t have a burger like this anywhere else. I think if the recipe is polished this can be a top quirky experience especially for people who haven’t had the Bulgarian fried cheese.
