Since Mother Flipper has been on my list for some time and I won’t be getting a second try any time soon it was worth it to not have breakfast they day I tried them. This way two burgers could satisfy the hunger and my curiosity. The Chilli Flipper was the quirkier burger compared to the last one.

How tasty is the Motherf*#$&r? – 7/10

I’ve learned to enjoy spicy food in recent years and a well balanced chilli flavour can turn a good burger to amazing.

The burger had:

  • Beef Patty
  • Jalapeno Relish
  • Cheddar
  • Ranch Mayo
  • Lettuce
  • Red Onion
  • Gherkin
  • Brioche Bun

The patty was genereally sufering from the same criticism as the previous burger. It was way too lean. The beef and fatty flavour wasn’t as prominent. However this time there were tasty chillies into the patty which was a twist that I really loved. The freshness of the green jalapeno brought much more contrast to the meat. It wasn’t what I expected and I liked it but I would have loved it if the meat cut was better and the burger was a tad bit jucier.

A trend I see into Mother Flipper’s recipe is that they focus a lot on the accent of the burger. In the swiss burger it was the sweetness and the heaviness in this one it was the chilli and freshness and this combined with not intense enough other ingredients makes for overpowering flavours. I like balance and I like when each ingredient has its moment to shine. The brightest shining was the jalapeno relish. It was one of the best relishes I have tried (especially chilli ones) . In a more balanced environment it can have so much more character and impact but when it is followed with even more chillies in the patty, more relish in the form of gherkins and onion it gets lost.

The cheddar could have balanced all the acidity coming from the other ingredients but it was simply not enough. A tomato, I think was going to make a big difference in the flavour profile but that doesn’t seem to be what they are going for

The brioche was great, not too soggy with a lot of structure.

Burger joint venue and overall experience? – 4/10

The burger stand had a pretty good variety. I wanted to try many more burgers but I went for only two. The fries were really nice (that was an expert opinion after I stole one from a friend’s box) There weren’t many drinks or other sides but that was expected. Overall nothing special nothing bad

Quirkiness level of the experience? – 2//10

Nothing really quirky about  the experience. A food stand at a nice market and a nice classic burger.
