Mother Flipper has been on my list for a while but was never close enough to try them out. I saw that they were coming to the KERB Gherkin street market and since it is close to work I went to give them a try, finally. I wasn’t sure what to expect but they seem more of junk streetfood style burgers rather than gourmet burgers so I think my expectations were set correctly.

How tasty is the Motherf*#$&r? – 6.5/10

This was for sure a more classic style burger hence I think it was a good jundge of overall execution.

The burger had:

  • Beef Patty
  • Swiss Cheese
  • Candy Bacon
  • Candy Onions
  • BBQ sauce
  • Ranch Mayo
  • Brioche Bun

The meat always is the core of a burger and when the execution is not there, it is a problem. I have iterated over my main problems with burger patties. You cannot have a very lean cut and if you do it needs to be of exceptional quality and seasoned better. In this case, we had a patty that was barely seasoned a very lean so the flavour was missing. I understand the idea of purity in a burger patty but you need to make sure you have the right ingredients both in terms of a quality fatty flavourful cut and the right condiments around it so it can shine. The next issue is putting bacon with a lean cut, it is frequently done and I’m not sure why. It makes the burger and the flavours sub-par because you are adding a fatty dominating bacon flavour to a lean delicate beef flavour and you absolutely lose the beef.

The swiss cheese was nice when you could feel it in the bites. This is a great example of a burger that was going to do great without bacon because it was overwhelming all the other ingredients. With the lean patty, this cheese would have worked much better because of the specific taste of the cheese.

I liked the ranch mayo it was contrasting the sweetness from the bacon, onions and bbq sauce and made up for tasty bites. The sweetness was good in its own right but was simply too dominating of a flavour because of the mentioned trio. Combined with the brioche this was a really nice base only if it was followed with a better patty.

Burger joint venue and overall experience? – 4/10

The burger stand had a pretty good variety. I wanted to try many more burgers but I went for only two. The fries were really nice (that was an expert opinion after I stole one from a friend’s box) There weren’t many drinks or other sides but that was expected. Overall nothing special nothing bad

Quirkiness level of the experience? – 2//10

Nothing really quirky about  the experience. A food stand at a nice market and a nice classic burger.
